Another delicious crock pot masterpiece!

I love pumpkin pie this time of year and was inspired to make pumpkin pie pudding in the old slow cooker a few weeks ago.  To make this, I needed:

  • 1 15 oz. can of pumpkin puree
  • 1 12 oz. can of evaporated milk
  • 3/4 cup Bisquick
  • 2 eggs, beaten
  • 2 tablespoons of melted butter
  • 2 teaspoons vanilla
  • whipped topping to go on top

Now since it’s another crock pot recipe, you can bet your ass it’s easy.  You basically mix everything but the whipped topping all together, toss it in the crock pot on low and walk away for about 6 or 7 hours.  This gives you time to go to the gym, clean your apartment and take a shower.  Or take a huge nap.  Or have an extra long dance party.  Or read most of a book, write some of a book or watch 3 or 4 movies.  You get the idea.

While the recipe calls this pudding, it tastes mostly like the inside of a pumpkin pie.  I sprinkled a generous amount of pumpkin pie spice on the whipped topping when I served it and it was pretty great.  Of course, if I’m going to be completely honest I should admit I prefer actual pumpkin pie better.  I even have some in my fridge right now.
